If Earth had no atmosphere, the “color” of the sky would be black (and dotted with stars and planets) at all times.  This is the condition of the sky that the astronauts found on the Moon, which has no atmosphere.  The reason the sky is blue for Earth, is that the air molecules scatter light from the Sun in all directions, and preferentially scatter blue light down to the surface.  If there were no air molecules to scatter the light from the Sun, the only light we would see would be from the stars/planets and directly from the Sun and the rest would be black.
